I will also say that I helped with an E10 implementation on an ESXi host (Dell R610 if memory serves with 8-core Intel procs) that was all SSDs in local storage earlier this year for an 8-10 user system. Performance was less than desirable until we made the recommended configuration changes to web.config, machine.config, and some other system configuration files. Only then was the application as fast as you would expect it to be with the hardware they had. The server is only running the two VMs that run Epicor (one SQL 2012 VM and another VM that is just an application server).
